Healthy granola bars

Just pulled this recipe together today, and the result was sooo good. My kids loved them, and probably they'll be gone by tomorrow. These granola bars contains many good building blocks, and provides substantial energy.


The ingredients:


4 dl gluten-free, organic oat 2 dl coconut shredding 1 dl pumpkin seeds 1 dl sunflower seeds 4 tbsp sesam seeds 200 g chopped dates ½ dl agave 50 g melted extra virgin coconut oil 1 dl boiled ginger-water ½ tsp Himalayan salt


How:


Start by making the ginger-water. Chop 1 inch of fresh ginger. Take a small casserole, add 1 cup of water and the ginger. Bring it to a boil under a lid, turn down the heat and let it simmer for about 10 min. Cool down.

Turn on the oven on 220˚C

Mix all the dry ingredients and spread the mix out on a baking sheet. Roast it in the oven for until it gets a bit of a color. About 10 min. Take it out of the oven, and let it cool down until the mix lukewarm before continuing.

Pour the dry mix into a baking bowl

Chop the dates in a food processor

Mix the dry with the wet and blend it into a sticky dough.

Use a form (35x25 cm) and have a non-stick paper in it.

Add the dough into the form, and either use your hands or a spatula to firmly press the dough down.

Let it stay in the fridge for 6 hours

Now, either cut it into portion pieces, or add chocolate on top before cutting them.

Put them into a container and store in the fridge for a week or two. You can also pack them in some celofan or greasproof paper.

Chocolate topping:


120 g agave 60 g melted extra virgin coconut oil 60 g cacao powder

Melt the coconut oil and whisk all the ingredients together.

Either just pour the mix over the granola bars, or you can take it into a cornet to form a fun texture on top.
