A nutritional bowl of amazing broccoli soup. This is so fast and easy to make, and perfect either for lunch, an appetizer, or a late-night snack.
Broccoli is one of the super foods – being a powerhouse full of vitamins, minerals, fiber and antioxidants. I also made this soup with a special vegetable broth, so this combination was amazing. You can however add any other broth or bouillon.
For 2 people:
1 broccoli – wash it by soaking it in cold water with a splash of vinegar. Use the whole broccoli.
1 onion
1 large garlic clove
1/3 chili
1 tbs ghee or coconut oil
5 dl vegetable broth or bouillon
2 dl oat cream
Himalayan salt & pepper as needed

Add ghee or coconut oil in a casserole, heat it and add onion, garlic and chili. Cook until the onion is shiny.
Add vegetable broth or bouillon, and the broccoli. Cook under a lid until the broccoli stems are soft.
Take of the heat, and use a hand blender to liquify the soup
Add oat cream.
Add salt and pepper to your own taste buds.
Wonderful to serve it with sprouts and homemade focaccia.
